White Balsamics in this category are produced from the white, sweet Trebbiano grapes. These grapes are pressed and the skins and seeds are strained out. The juice is cooked for a few hours, therefore it retains a light color, and a small percentage of white wine vinegar is added. These balsamics are aged for a few years in new wooden barrels, then decanted. The white variety is often used when the color of white sauces or foods will be adversely affected by the dark brown color of traditional balsamico condimento. White balsamic vinegar is bright and less sweet than traditional balsamic vinegar.
